Ingredients
For the Chicken
- 2 pounds boneless or bone-in chicken pieces
- 1 cup plain yogurt
- 2 tablespoons ginger-garlic paste
- 1 teaspoon salt
- 1 teaspoon red chili powder
- ½ teaspoon turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon garam masala
- 1 tablespoon lemon juice
- 2 tablespoons cooking oil
For the Rice
- 3 cups basmati rice
- 8 cups water
- 2 teaspoons salt
- 2 bay leaves
- 4 green cardamom pods
- 4 whole cloves
- 1 small cinnamon stick
- 1 teaspoon cumin seeds
For the Biryani
- 3 tablespoons cooking oil
- 2 large onions, thinly sliced
- 2 large tomatoes, chopped
- 2 green chilies, sliced
- ½ cup fresh cilantro, chopped
- ½ cup fresh mint leaves
- ½ teaspoon garam masala
- A pinch of saffron, optional
- 2 tablespoons warm milk, optional
Instructions
1. Marinate the Chicken
Place the chicken in a large bowl.
Add yogurt, ginger-garlic paste, salt, red chili powder, turmeric, cumin, coriander, garam masala, lemon juice, and oil.
Mix everything thoroughly so the chicken is evenly coated.
Cover the bowl and refrigerate for at least 30 minutes. For deeper flavor, you can marinate it for several hours.
2. Prepare the Rice
Rinse the basmati rice several times with cool water until the water becomes relatively clear.
Soak the rice for about 20–30 minutes, then drain.
Bring a large pot of water to a boil. Add salt, bay leaves, cardamom, cloves, cinnamon, and cumin seeds.
Add the soaked rice and cook until it is partially cooked. The grains should be tender on the outside but still slightly firm in the center.
Drain the rice immediately and set it aside.
3. Cook the Onions
Heat oil in a large heavy-bottomed pot over medium heat.
Add the sliced onions and cook until they become golden brown.
Remove some of the browned onions and set them aside for garnishing.
4. Cook the Chicken
Add the marinated chicken to the remaining onions in the pot.
Cook over medium heat, stirring occasionally, until the chicken begins to brown and the yogurt mixture develops into a thick sauce.
Add the chopped tomatoes and green chilies.
Cover and cook until the chicken is cooked through and tender.
5. Layer the Biryani
Reduce the heat to low.
Spread half of the partially cooked rice over the chicken.
Sprinkle some cilantro, mint, and garam masala over the rice.
Add the remaining rice as the final layer.
Top with the reserved fried onions and the remaining herbs.
If using saffron, mix it with warm milk and drizzle it over the top of the rice.
6. Steam the Biryani
Cover the pot tightly with a lid.
Cook over very low heat for approximately 15–20 minutes.
This steaming process allows the rice to finish cooking while absorbing the flavors of the chicken and spices.
Turn off the heat and let the biryani rest for about 10 minutes before opening the lid.
7. Serve
Gently fluff the biryani with a fork or large spoon.
Be careful not to mash the rice or stir too aggressively because you want to keep the rice grains intact.
