  • 12 ounces fettuccine or penne pasta
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil

  • 1 cup heavy cream
  • ½ cup whole milk
  • ¾ cup freshly grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes, optional
  • 2 tablespoons chopped fresh parsley
  • ½ cup reserved pasta water

Instructions

1. Cook the Pasta

Bring a large pot of water to a boil and add a generous amount of salt.

Add the pasta and cook according to the package instructions until al dente. The pasta should be tender but still have a slight bite.

Before draining, reserve about ½ cup of the pasta water. Drain the pasta and set it aside.

2. Prepare the Garlic

Place a large skillet over medium heat.

Add the butter and olive oil. Once the butter has melted, add the minced garlic.

Cook for about 30–60 seconds, stirring frequently, until the garlic becomes fragrant. Be careful not to brown or burn the garlic because it can make the sauce taste bitter.
